  • Years ago I worked in a commercial kitchen where we had large grease fryers for potatoes. A co-worker accidentally dropped his wedding ring into a freshly filled fryer that was at frying temperature - around 450 degrees. The oil was perfectly clean and had never been fried in before. Not realizing the oil was at temp, he simply reached into the oil and grabbed the ring! His arm came out without a burn, but he had a small brand from the ring in his palm. Nothing else. It was scary amazing!

  • @asdfuogh it doesn't matter if the hand is colder or warmer, what it does matter is the layer of water surrounding it. Because the water is what isolates the hand against the heat. The water surrounding the hand instantly vaporizes and creates a layer of vapor which protects the hand for a short period of time. So it wouldn't matter if your hand would be cold or warm, you'd still get burnt if you don't get it wet first.

Just like when a drop of water hits a hot pan. It doesn't dissipate immediately. It bounces around of a sheet of vapor for a moment first.

    That is the Lieden Effect. Without moisture there is no protective vapor.
