  • @Shirow66 according to IBA the Recipe is: 1+1/4 oz White Rum 3/4 oz Dark Rum 1/2 oz Orange Curaćao 1/2 oz Orgeat syrup 1/4 oz Fresh lime juice

    Garnish is pineapple spear, mint leaves and lime peel.

    No rock candy. IBA recipes update frequently, in the old recipe dark rum floated on top of the drink.

    A good bartender never shakes crushed ice cause it melts too much. You shake it with ice cubes and strain to a glass filled with crushed ice.

  • @iamthejust Well the IBA is wrong obviously. IBA is just for standardization purposes, not actual authentic recipes. Google Trader Vic's original recipe and you will see. There was never a float in a Mai Tai, and all the rum is supposed to be 17 year old Jamaican.

    Do you shake crushed ice? Or you shake regular and pour over crushed ice?

  • @iamthejust I shake with crushed ice, it chills faster and gives the perfect dilution since the drink is strong.

  • @ginalola333 That's not unusual. Fast paced bars, by necessity, have shortcuts and must balance costs. The Mai Tai, like many "tiki" drinks use many ingredients, usually require preparation and time that isn't practical at a busy establishment and premium ingredients that barely scrape a profit. Pineapple juice and premix thrown into a blender with cheap rum are the shortcuts many have gotten used to.

  • Shaking with crushed ice? NO WAY man! always shake with cubes to keep the dilution of the drink at minimun than STRAIN into a glass with crushed ice (as the drink is now already cold it wont dilute anymore)

    Garnishing tip: don't put the lime upside down in, let it swim on the surface, fill it with a splash of overprrof rum and set it on fire.

    trust me it looks awesome!!

  • @MrGeometres The Mai Tai is a strong drink and requires certain dilution to be optimal. Different drinks call for different techniques, and in this case shaking with crushed ice is the way to go. Crushed ice chills faster and you don't need to shake as long.

  • I don't know how much you pay for the El dorado 12 in the US, but here in germany it's about 30 Euro which is over 40 Dollar. Therefore it's way to expensive for me to use it in a cocktail. I prefer Appleton 12 and Barbancourt 8, both about 22 Euro.

  • Except for the demerara rum, this is the most authentic Mai Tai recipe on YT. Rock candy syrup does make a difference.

  • @soleguy I've never used creme de almond in place of the orgeat, but you probably could. It would be worth experimenting. Otherwise,  For about $15 you can order some orgeat online and have the real thing. It's worth the trouble. This recipe is amazingly good!

    Because drinking for enjoyment and drinking for intoxication are two different things. Some people just want liquor with some sugar and acid added, as quickly as possible, to get drunk.

    Others want a culinary masterpiece.

  • I've never done a Mai Tai the Chow way, but I've done a Margarita the Good Eats way, and compared to mixes - no comparison is even possible.
