fondant will absorb moisture... esp if you wait til the next day to serve it... same thing will happen if you refrigerate the cupcakes and then add fondant on top..it will absorb moisture as well

sometimes i can get away without doweling a two tiered cake only if i am really sure the second tier is adhered to the base tier ( by using borders etc)... but to be safe, dowel it :) esp for three or more tiers.... i cannot imagine having top tiers rolling out when the cake gets delivered because the car had to make a sharp turn! :)

oh thank you :) you just build the petals on top of each other til you get the size you want-- OR start with bigger fondant balls and shape them into petals.
For "show" purposes-- once you out the fondant, you dont want to put it in the fridge--bec the coldness will make the fondant's surface develop water beads and will turn sticky later. BUT , to the cake's preservation and if you are not concerned about the cake getting sticky bec it will be eaten right away anyway, you can put it in the fridge.

Thank you! I make my cake a maximum of two days before the event. If you can make it and decorate all in a day -- then good. but I give the cake enough time to settle before i cover it with fondant. and from the time the cake is covered in fondant, you cant put it back in the fridge until after the event for leftovers-- so when the fondant is on-- time is ticking. Make sure it doesnt go past two days, bec it is not refrigerated
the chocolate fondant was bought. it is the satin ice brand. it comes in vanilla flavor, in assorted colors, and also in dark chocolate--which is what i used for this one.

sorry it took time to answer this-- but to answer your question... karamihan dito sa youtube ako natuto. i watch the videos over and over, many times id pause in between and do the task... and when i fail at it at times, i just do it over again til i get it right :)

I have had several people now already having their little home business after learning through youtube...turnaround time was very quick! a few months and they were real good!
i bought this premade. you can get chocolate fondant in diff brands like satin ice, bakels, choco pan... its a lot easier to start working with the fondant already having that deep chocolate brown color. it wll take an eternity to color it that dark.
question: how do you support the two-layered cake? is there like a 'stick" that you place in the middle to like carry the weight? im not sure how its done :(
i actually did not do that for this cake-- bec back then i did not know how--that's why this cake has 'folds' in it bec the top layer was pressing on the bottom tier. i highly recommend watching the video "assembling a wedding cake' from epicuriousdotcom-- now that's how i support all my cakes. hope that helps :)
Very Pretty!!! Would you mind sharing how you lay the roses on top? Is there a mound underneath and then roses are formed onto, or do you just place roses ontop of other roses? You have a beautiful mound top, any tips on that would be appreciated!!!
Thanks for your comment :) Back then I used just a small ball of fondant, and the roses stuck to it with a bit of water... but if i were to do it again... I could either use fondant glue to make it stick faster... or if weight is an issue, use styrofoam and cover it with fondant -- to replace the fondant ball inside. And if stability will be an issue too, you can always stick a pieve of toothpick on the underside of the rose right after you make it and have it dry-so you can stick it in the ball

i used store bought fondant for this-- it's quite hard to knead in coloring to make the white fondant turn chocolate brown. some use marzipan as a 'first coat' or layer before putting fondant on fruit cakes only. i have not used marzipan and i dont know if it hadles the same as fondant. all i know is that its more expensive than fondant. ill send u a link to making fondant at home-with that chocolate fondant is highly possible rather than mixing in the color on white fondant that's store bought.

Hi. Thanks for the comment. I would use fondant glue and also use toothpicks to hold the flowers in place--if i were making this now. Back then I did not know what fondant glue was :) So for this cake, I had a fondant 'ball' in the middle fo the cake and I used dabs of water to stick the flowers in... it worked though... but if i were to make it now...to secure it, id use fondant glue and toothpicks :)
thanks ! the materials are readily available at your local craft store like michaels or at walmart... you can buy readymade fondant at first and try to get a feel of it and play with it ... and you'll definitely have fun making a cake and decorating it with fondant. if you have not bakes before, let me know so i can forward to you the stuff that needs to be done to make your cake ready for fondant :)

i honestly think the only color you can make it is lighter brown. ( by mixing white fondant with it ) . it's pretty dark brown so changing the color will be difficult, i think.
i buy it ready made- chocolate fondant. Satin ice has a dark chocolate version, and bakels has regular chocolate. the one used here was bakels, i haven't tried the chocolate satin ice yet.

hi! when i make fondant flowes or figures, i add just a little bit of Tylose. and if you don't want to spend money buying fondant or time and money making it just to practice, try using play dough. it's just about the same thing and much, much cheaper! that's how i practice.
thanks for that tip. will the fondant be edible if i do that? im wondering if gumpaste is a better medium to make flowers...havent tried that yet. but fondant can be som soft sometimes, its hard to make the figure stay the way you want it... more tips pls. i appreciate it !!!
yes, Tylose is a powder you add to fondant and other things like ice cream. It's a binder and thickener. According to Toba Garrett (from her book The Well Decorated Cake) just add 1.5 tsp Tylose to 1 lb store bought fondant OR 2 tsp to 1 lb homemade fondant and that's how she makes her "quick gumpaste". and yes, gumpaste is a better choice. You can buy Tylose in any pastry/baking supply store. I've got some good fondant recipes (cream cheese, coffee, orange, etc) let me know if you're interested

I have been in three competitions and got tow first place spots and one second. Also tons of offers for employment. I like my hobby and yes i do it as well pt.

Hi, I am from Australia ... we have what we call the Orchard brand of icing here which looks like the 'fondant' you have here. I tried using it before but perhaps I may have kneaded it not long enough for it to be effective. did you have to need the fondant quite a long time before you can stretch it and start using it? and these fondants ... they are bought ready to be rolled/kneaded aren't they?
If you are using ready made fondant, it needs to be kneaded out long enough for it to feel like play dough-- or modeling clay -- if that makes sense. It will be really soft and very pliable --- if you would want to create 3D figures, you will need to make these set overnight to have them hold that position. Hope that helps !!!

firstly, adorable. second...where did you get the chocolate fondant? did you buy it? or...gasp...MAKE it?? here's another question... is there a cake board between the tiers? The ribbon looks really cool, how did you do the pattern on it?
resting maybe about 20 minutes or so. Since you are putting it directly back into the refrigerator after icing it, you are chilling the icing, and then it warms to room temperature after the fondant goes on, creating the bulge. I think it needs to rest at room temperature to be sure any settling will occur while the icing is not cold. That's my best guess!

I had to post two comments- I wrote too much at once!
some people even take a cake circle cardboard and press down on the top of the cake a little to make sure anything that will bulge out does so before putting the fondant on. Whatever bulges out can be smoothed out prior to the fondant going on.

sorry it took time to answer this-- but to answer your question... karamihan dito sa youtube ako natuto. i watch the videos over and over, many times id pause in between and do the task... and when i fail at it at times, i just do it over again til i get it right :)

hi, sorry it took time to repsond. I did not take classes. And im a product of youtube and the selfless people who share their knowledge and time here... so if you want to give this a shot, by all means do it !!! I have had several people now already having their little home business after learning through youtube...turnaround time was very quick! a few months and they were real good!

i bought this premade. you can get chocolate fondant in diff brands like satin ice, bakels, choco pan... its a lot easier to start working with the fondant already having that deep chocolate brown color. it wll take an eternity to color it that dark.

question: how do you support the two-layered cake? is there like a 'stick" that you place in the middle to like carry the weight? im not sure how its done :(

i actually did not do that for this cake-- bec back then i did not know how--that's why this cake has 'folds' in it bec the top layer was pressing on the bottom tier. i highly recommend watching the video "assembling a wedding cake' from epicuriousdotcom-- now that's how i support all my cakes. hope that helps :)

Very Pretty!!! Would you mind sharing how you lay the roses on top? Is there a mound underneath and then roses are formed onto, or do you just place roses ontop of other roses? You have a beautiful mound top, any tips on that would be appreciated!!!

Thanks for your comment :) Back then I used just a small ball of fondant, and the roses stuck to it with a bit of water... but if i were to do it again... I could either use fondant glue to make it stick faster... or if weight is an issue, use styrofoam and cover it with fondant -- to replace the fondant ball inside. And if stability will be an issue too, you can always stick a pieve of toothpick on the underside of the rose right after you make it and have it dry-so you can stick it in the ball

i used store bought fondant for this-- it's quite hard to knead in coloring to make the white fondant turn chocolate brown. some use marzipan as a 'first coat' or layer before putting fondant on fruit cakes only. i have not used marzipan and i dont know if it hadles the same as fondant. all i know is that its more expensive than fondant. ill send u a link to making fondant at home-with that chocolate fondant is highly possible rather than mixing in the color on white fondant that's store bought.

Wow, your cake looks so beautiful and elegant. How did you get the roses to stay in place on the top? I have heard that some people use toothpicks or royal icing. Did you use gum paste glue to get the fondant accents to stick on the cake? Sorry for so many questions, but I am dying to try this. Thanks in advance!!

Hi. Thanks for the comment. I would use fondant glue and also use toothpicks to hold the flowers in place--if i were making this now. Back then I did not know what fondant glue was :) So for this cake, I had a fondant 'ball' in the middle fo the cake and I used dabs of water to stick the flowers in... it worked though... but if i were to make it now...to secure it, id use fondant glue and toothpicks :)

thanks ! the materials are readily available at your local craft store like michaels or at walmart... you can buy readymade fondant at first and try to get a feel of it and play with it ... and you'll definitely have fun making a cake and decorating it with fondant. if you have not bakes before, let me know so i can forward to you the stuff that needs to be done to make your cake ready for fondant :)

if you have chocolate fondant and it's brown (of course)
can you make it a different color, or will the color blend in with the brown?

i honestly think the only color you can make it is lighter brown. ( by mixing white fondant with it ) . it's pretty dark brown so changing the color will be difficult, i think.

i buy it ready made- chocolate fondant. Satin ice has a dark chocolate version, and bakels has regular chocolate. the one used here was bakels, i haven't tried the chocolate satin ice yet.

thank you, i like the idea of making a chocolate fondant cake. i was supposed to be making a cake tonight, but a certain accident with my hand in the technology room ended up with me in hospital this after noon, so i guess there is not cakeing for this week, which meens all my orders have to be delayed, never mind haha!

Very good :] much better than I can do...my cakes always get "eaten" by people before I can even finish it (even though they don't like the taste of fondant and gum paste.)

hi! when i make fondant flowes or figures, i add just a little bit of Tylose. and if you don't want to spend money buying fondant or time and money making it just to practice, try using play dough. it's just about the same thing and much, much cheaper! that's how i practice.

thanks for that tip. will the fondant be edible if i do that? im wondering if gumpaste is a better medium to make flowers...havent tried that yet. but fondant can be som soft sometimes, its hard to make the figure stay the way you want it... more tips pls. i appreciate it !!!

yes, Tylose is a powder you add to fondant and other things like ice cream. It's a binder and thickener. According to Toba Garrett (from her book The Well Decorated Cake) just add 1.5 tsp Tylose to 1 lb store bought fondant OR 2 tsp to 1 lb homemade fondant and that's how she makes her "quick gumpaste". and yes, gumpaste is a better choice. You can buy Tylose in any pastry/baking supply store. I've got some good fondant recipes (cream cheese, coffee, orange, etc) let me know if you're interested

I have been doin wedding cakes as a hobby for some years. I have not alot of experience with rolled fondant or sugar flowers, but that is another direction I am exploring. I have been in three competitions and got tow first place spots and one second. Also tons of offers for employment. I like my hobby and yes i do it as well pt.
Just want to say, I enjoy watching your videos, think your cakes are beautiful and that you will be just fantastic at the pace your going so far.

Hi, I am from Australia ... we have what we call the Orchard brand of icing here which looks like the 'fondant' you have here. I tried using it before but perhaps I may have kneaded it not long enough for it to be effective. did you have to need the fondant quite a long time before you can stretch it and start using it? and these fondants ... they are bought ready to be rolled/kneaded aren't they?

If you are using ready made fondant, it needs to be kneaded out long enough for it to feel like play dough-- or modeling clay -- if that makes sense. It will be really soft and very pliable --- if you would want to create 3D figures, you will need to make these set overnight to have them hold that position. Hope that helps !!!

firstly, adorable. second...where did you get the chocolate fondant? did you buy it? or...gasp...MAKE it?? here's another question... is there a cake board between the tiers? The ribbon looks really cool, how did you do the pattern on it?

resting maybe about 20 minutes or so. Since you are putting it directly back into the refrigerator after icing it, you are chilling the icing, and then it warms to room temperature after the fondant goes on, creating the bulge. I think it needs to rest at room temperature to be sure any settling will occur while the icing is not cold. That's my best guess!

OUTSTANDING job!!!
if you let your cake "rest" after putting your icing on the cake (before laying the fondant) you will have a smoother finish.
also, after cutting your fondant strips, let them sit for a few moments to firm up before trying to lay them on the cake.
you can only get better from here! you're very gifted!

I had to post two comments- I wrote too much at once!
some people even take a cake circle cardboard and press down on the top of the cake a little to make sure anything that will bulge out does so before putting the fondant on. Whatever bulges out can be smoothed out prior to the fondant going on.
