  • To prevent the eggs cooking when you pour it in, you can 'temper' them by putting a little bit of the rice mixture into the eggs, mix it, and then you can add the egg mixture in one go

  • When I was little my nan made batches and it was much thicker and was sweet.

    When she made it some had it cold and some kept it hot with dollop of cold jam in the middle. Try it with jam it's out of this world

  • I MADE THIS IT IS AMAZING! (btw i used instant rice, it works. what you do is when the rice is done you just add a lil boiling water in the big bowl with the rice, then add milk and do the rest as said!) I LOVE U!

  • I hate using electric hobs because they're useless, gas ones are better because they have instant heat.

  • My way is alot easier. 1 cup rice. Place in saucepan. Pour 1 1/2 cups water. 1 cinnamon stick, break it in half, put it in pot. Dash of salt. Cook over med heat. Stir occasionly. Once the rice starts to get soft.(Take out afew grains,press between fingers,should feel semi-soft) Stir in 1 can Sweet Condenced Milk. Stir mixture to a slow boil. Pour reg. milk into the empty can, about half way. Add a teas. of Cornstarch. Mix well, pour into hot rice mixture,let thicken. Take out "C"sticks.Serve.

  • This is a great recipe Jack. I've already altered it for more of a deli taste and another one for more of a custard taste. I've also been sacrilegious and used basmati rice and brown rice. My favorite is risotto. Your recipe is easy and tastes great just as you prepare it. Thanks much for sharing.

  • In iceland we don't add any sugar or eggs or vanilla in the porridge. When it's done we take cinnamon and sugar and mix it together and pour it to on the porridge on the plate. It's really good

  • I had to remove the egg yolks bc it tasted like eggs when I was done. To compensate for the egg flavor I had to add a lot more vanilla, cinnamon, and milk.

  • I've got a homemade rice pudding in oven now. You do yours differently to me. I add rice brown sugar milk cinnamon and cook it for 2 hours. It's amazing but wish I'd watched your recipe first. Looks so delicious. Does adding the eggs and vanilla make it taste a lot better?

  • believe it or not they actually have a certain rice for rice pudding. not sure if it makes any difference in taste or time it takes to cook but I went out an bought some and im going to make rice pudding.

  • @xKoolkatb24x long grain rice is usually the one that is used. don't spend too much extra money on rice that is marketed for rice pudding. this is my favorite recipe of all my shows.

  • by mistake my roommate had poured medium grain rice into the pot by accident when we were making it. it was too late to strain the mixture and start from scratch so we just went with it. it actually turned out great! he tried it with short grain rice too and it turned out good.

    i made mines to runny so i had to put in some Cornstarch in it and fixed it right up !!

  • @kerrynfm if it's too runny just cook it down with a low flame next time. it will thicken.

  • @1amberx I would buy long grain rice. I know this works perfect with long grain. You could try with regular rice, but not sure how it will taste.

  • @MCCARTNEYWALL you can also use a little nutmeg or just leave it out all together and it will still be awesome.

  • Jack, you should use the proper technique for tempering eggs. Instead of putting the eggs into the hot mixture, you instead take small spoons of the hot mixture and whisk it into the colder egg mixture. After doing this a few times, THEN you stir in the egg mixture back into the hot mixture.

    Hey Jack, I noticed that when you first poured the rice into the pot of water, the water turned milky. My parents told me that the white stuff is actually 'dust' and throws off the flavor of the rice (it does to me haha). With that being said, is it alright to rinse the rice a few times before throwing it into the pot for cooking?

  • @azntranc3951 yes. you can rinse the rice if you'd like. I have never done that and it has always been flawless.

    Make sure you use a nice large bowl, i used a Med-Lrg bowl and it nearly boiled over.

  • Hi Jack, thanks for the recipe. Just one question if I may: Why do you cook the rice in the water and not the rice in the milk itself? My idea would be to cook the rice in all of the ingredients so that the rice will absorb all of the milk and vanilla etc to hopefully get a better taste...does that make sense or is it just a silly idea? :-D

I have tried it 'my way' and believe that it is an improvement of the recipe (I tried it 'your way' before), the rice seems to soak up all the flavour but I hope I'm not thinking what I want to think...maybe I should make an other sample soon :-p lol. Only I really slow cooked it because as with vegetables, if you cook it long and on high temperature you cook it dead and the taste becomes less...(and you need more milk of course)

  • @Aeythvaenn so you have done it by slow cooking with all liquids at once? how did that work?

  • @jakatak69 I just put 10 cups of milk on the stove with the rice, vanilla and cinnamon. Put the fire on 1/4th (i cook electric) until steam comes of of it and just slightly bubbles every now and then and stir regularly. When it is quite thick and the rice is very done add the egg, salt and sugar...for the rest it is how you do it. I hope this is satisfactory?

  • Add some Gand Marnier and some brandy (very small quantities) to the water, and also an orange zest, the flavoiur will greatly improve.

  • @cluts00 you pour the milk in when the water is almost all gone and it's thick. You pour the sugar in when the milk is almost all gone and it's thick. You pour the egg in when the pudding is thick again. You always wait for thickness before moving to the next step.

  • @cherd1971 I have yet to try it. the only thing is it won't have the shine that this one does. Sugar caramelizes and splenda doesn't. it should still taste great.
