  • If you don't have any celery, you can take some fresh spinach leaves (large are best), cut off the stems, and chop the stems up.

    spinach stems have the same effect as celery, but unlike celery, they're loaded with vitamins and minerals (esspecially calcium and iron).

    Celery is baisically just water and fiber (like Iceburg lettuce).

    Your body burns more calories by eating celery, than it absorbs from eating it.

  • Yes, it's a great way to use leftover chicken--I wish I had had some for the video! If you can't find the pastry shells, the hot chicken salad is still good--but the pastry shells make them a little extra special! Thanks for your comment!

  • Hi! I actually used red bell pepper, because the taste is quite similar. You can use canned pimiento from a jar (about 4 oz. size), or just use red bell pepper, because pimiento is hard to find!

  • I have an idea that should work for you. You could look at my Traditional Kentucky Country Ham Biscuits recipe for the biscuits. (If you don't want to go to this much trouble, you can buy a pan of small dinner rolls and use them in the place of biscuits.) An easy way to make the chicken would be to make my Ritz Cracker Chicken Nuggets recipe, just cut the size that would work for your biscuit, use a mallet to pound it to a flattened shape for a sandwich, and follow the instructions.

  • Hi Ben,

    Sure, you could do pot pies in these tart shells. The easiest way would be to mix drained Veg-all with canned chicken, and add chicken broth with a little cornstarch for thickening. Heat on the stove, and then place in the baked tart shells. Top, if desired.
