  • Thanks for your response. I hope to try it next week. My mom made stew beef fork tender in about 15 or 20 minutes in her pressure cooker when I was a kid. I loved her version of beef stew that was a clear broth. Dad didn't like gravy (weird) and she could dish out his stuff with a slotted spoon. Ours was so healthy and pure, I think. It was more of a soup, but I remember it so fondly. I must try it again with this new pressure cooker. Mom will smile from heaven upon me.

  • I got a pressure cooker today and I am kind of scared to use it and there are no instructions with it. I'm glad I saw you use this as I might feel a bit less nervous.

  • @LHeminway It sounds scarier than it is. Also, when you're done cooking, if you will hold both handles together tightly and transfer it to your sink, dribble a little cold water from the sink over the top of the hot lid, it will release the pressure slowly, and that is less disturbing!

  • My mother in law always used her pressure cooker for her mashed potatoes. It keeps the flavor in them so much better. Not watery like over boiling makes them.

  • A family member worked for Presto, a company that made pressure cookers, so you know I love pressure cookers. I still use mine regularly.

  • The recipie looks very good. I am a mid-fifties male born and raised in rural Florida. I well remember the old jiggler-style pressure cookers. I am surprised that you are not using one of the new-style pressure cookers. Would go a long ways towards not scarning the daylights out of your readers. I just boughy my cooker, a fagor duo-pressure, about 3 months ago and use it 2-4 times a week. A little bacon, pepper, and onion makes this recipe truly 'southern.' Thanks.

  • Love your videos. If you run cold water over the hot pressure cooker once it's in the sink.....much better/safer. LOVE my pressure cooker.

  • Good Day, Thank you so much for this recipe ! I am going to make it today for a late lunch. I do use my pressure cooker quite regularly. I am looking for 2 recipes from a seasoned cook such as yourself ! First one is pressure cooker fried chicken. I have heard this is delicious. Also a pressure cooker beef stew. It is getting cold up here in the north and am looking forward to some stick to your bones meals. I sure would a appreciate a video tutorial on these two recipes. Please consider !

  • Mmmm. The Pot Liquor has some of the best nutrients in it and I LOVE it. I take the liquor and put it over some bread with a little salt and pepper. yummy!

  • I've grown up seeing my mom use the pressure cooker and use it as well...its not dangerous at all...just make sure no parts are missing when you start cooking and its well sealed...

  • Thanks for this. I just bought a new pressure cooker last weekend and I'm glad to get this recipe. I've done collard greens in 20 minutes and vegetable beef soup in 45 minutes. The pressure cooker is a great thing.

  • @CraigTube - They can be MADE dangerous though...like if you blocked the vent securely and the emergency vent too. Then replace the gasket with a heavy duty one. Then fill to the brim with thermite and gasoline, close, seal and re-inforce pot as much as possible on the outside. Then place on a large gas burner and run!

  • Great video - thanks for sharing. My grandmother always made her beans and greens like that in a pressure cooker when I was a kid. One comment though - I just can't see myself eating green beans and fried chicken with a muffin. Where's the cornbread?

  • I guess I had made cornbread already and decided to use something else. Cornbread, of course, is always great!

    Back in the day my mom would sometimes prepare it via the oven and it was delicious!

  • Thanks for posting the video. I bought a pressure cooker today after a green bean failure a few weeks ago at a family gathering. I used a slow cooker recipe;15 hrs later, the beans were still hard. Maybe they were bad beans. : D For 3 lbs of beans, would you use 1 cup of water, or more? Also, I would be worried to only use vegetable oil - my family would consider it heresy to not use bacon or pork hocks. Does your family mind the difference? Thanks so much for the video. Very helpful!

  • I always put about an inch of water for 3 pounds of green beans, and my family loves the vegetable oil substitution--and it does make them healthier. You could add a packet of Goya ham-flavored seasoning (buy it in the International foods section of your supermarket), along with the water and oil. I think your bean should come out great--just don't put a lot of water in--an inch or so will be fine!

  • I just made these for dinner and they are so good. So much easier in the pressure cooker. Do you have any other pressure cooker recipes? I use mine for chicken for bbq chicken sandwiches a lot, but don't use it for many vegetables.

  • Actually, green beans are the only vegetable that I cook in the pressure cooker. I think any type of meat would come out more tender, and it particularly sounds good for poultry, but I don't have any recipes that I specifically do in the pressure cooker, other than the green beans. I will think about it, and see if I can come up with anything! Thanks for your comment!

  • I am basically from India and we use pressure cooker for almost everything out there, its fast and it's easy :).

    A funny thing happened when I first came to US, I went to store to buy a pressure cooker but I mistakenly ended up getting a "slow cooker". I guess the store clerk didn't know about pressure cooker. I never returned back the slow cooker, but now I also do have a pressure cooker and I use it regularly for beans and things like that.

  • Hi Betty, My Grandmother used a preesure cooker when I was a little girl and her dishes were wonderful!! Did you know there are some top chefs that still use pressure cookers like Marco Pierre White? Way to go Betty!!

  • That was an interesting video. I've never used a pressure cooker and really don't know anyone who has one either! What else have you used it for? I've heard it was a good way to cook pike, (a fish called northern pike). Thanks for this demonstration:)

  • I really only use it for green beans myself, but as I was growing up, we used a pressure cooker to cook tougher cuts of meat and for canning. I have never tried it with fish, but I'm sure it would be good. The positive things about it are that it cooks very quickly, and the food is very tender. Thanks for your comment--i was afraid people would think I was a little crazy!!!

  • It is--You have to be judicious about loading down the sweet potato and blueberry muffin with butter, etc--and maybe eat only half of the rich dessert, but the main part of the meal is quite healthy! Thanks for your comment!
