What are the advantages of that outside leg triangle compared to the "regular" achilles hold position? What techniques are good to do from there? A link to some techniques and ideas would be great.
Hey, if they have their legs triangled, what keeps you from just hooking and going for the ankle lace, instead of waiting for them to "straighten out"?

That was my thought as well, we called it the re-hook counter and it almost ALWAYS wins against a straight leg attack (Right to Left)
Because you already have that leg crossed (Right to Right), the heelhook attack is much stronger than when you attack to finish it.

His legs will usually be stronger then your arms and tougher to move. Easier to make him move the leg himslef by causing some pain.
