In the drivers' defense, stangs are very torque-y and difficult to steer. the wheel doesn't snap back like you'd expect it to. A good driver would compensate but it happens. This is why I don't show off in my 3000gt. Id crash it :D

Those people are showing off and can't drive. You do not put the car in nuetral to regain control in a slide or skid. Nuetral is there for sitting with the clutch out at idle not as a stability control.

Moreover, If you do in fact take the car out of gear it decreases your chances of spinning out of control as your wheels are not pulling and sending you into a more unstable condition.
