Inside they (the 'beak masks') were filled with aromatic items (i.e. herbs). The masks were designed to protect plague doctors from putrid air, which (according to the miasmatic theory of disease) was seen as the cause of infection. We know today that plague doctor's uniform (including the famous beak mask) was useless and did not protect them from the bubonic plague...
@0masakra0 This is not entirely true. The doctor's uniform was somewhat effective against the non-flea types (pneumonia) of plague. Since they were not protected against flea bites, they succumbed to the plague sometimes. However, the herbs and small air holes did protect them against infected saliva and mucus from sneezing, coughing, etc.
