    If it asks for 4 eggs, for muffins, best replacer is Flax seeds or yogurt. But if you want to use tofu, blend halft cup of tofu. YOu can visit my website bhavnaskitchen(dot)com for more tips.

    Yes, you can. Please watch my recent videos of cakes to make from scratch....if using plain all purpose flour, add 2 tbsp corn starch to 1 cup of plain flour and that will make cake flour.

    I have a query hope u will help me in this, wenever i make cake sponge its top crust always turns into a very hard and thick layer...even i bake my cake on 170-180 degree and only for 20-25 mins....cud u pls guide me whats going wrong with my cake...and what steps do i follw for this....will waait for your response..!!

    There are many factors for not getting right texture. And you seems to be following right direction so not sure what goes wrong there...but try placing your rack in middle...

  • @rswati31 try covering the top with baking paper or foil [make sure this doesn't touch the cake] then remove when the cake is 3/4 cooked

    Vinger does not affect taste of cake at all...when you are not using egg, baking soda+vinegar replaces egg and vinegar activate soda nicely...

  • hi bhavna. thanks sooooooooooooooooo much. before when i made my sponge cake, it was gross. the recipie told me to add 8 eggs, and the cak turned out sck, but now im going to try it. and another thing, do i have to add the baking soda, or can i add baking powder? please reply ASAP.     8 eggs...for how much of flour! That sounds too much eggy...you can add baking powder or soda..if you add baking soda add only 1/4 tsp for 11/2-2 cups of flour and if adding baking powder, add 1 tsp for 11/2-2 cups of flour...hope this make sense!

    Cake flour is nothing but mix of all purpose flour and corn starch as I said earlier. Add 2tbsp of corn starch to 1 cup of plain flour and your cake flour is ready.

    You follow the exact recipe as directed. If recipe calls for baking soda and powder accordingly. Usually for 1 cup of cake flour, add 1/2 tsp baking power and just pinch of baking soda.

    If you want to make homemade cake flour, here is what you can do. Add 2 tbsp of corn starch for under 1 cup of plain flour. Then you will have to add baking powder, soda when you make cake.

    Tofu is made from soy bean.

  • I've used the pre-packaged cake mix before, and they definitely don't give a "sponge cake flavor". I think sponge cake is usually all purpose flour + cornstarch. There's a fluffy texture that is given by this combination. I've baked using all purpose flour + baking powder, and it has a decent spongy texture if eaten immediately. If refrigerated, it will condense into a heavier texture, like normal cake. Just some tips. Good incorporation of tofu! =)

    Yes, you are right. Even with tofu or any other egg replacer, it happens. But if you use ener-G egg replacer then it stays as great as just like made with egg. Enjoy!

    Sure. Try it and share with us how it comes out. Be sure to follow exact recipe ingredients and specially tofu. If you add more tofu, you cake won't come out right. If tofu is less that won't creat any problem so just to make aware that ready pack mix don't require even egg substitute, I just sometimes leave it out or just add a tbsp of flax seeds to dry ingredients and I never had any disaster ever however I make cake from ready mixes. Enjoy!

    If I use ready mix pack, I follow pack measurement. And usually, on standard ready cake mix, it asks for about 1/4 cup. Enjoy!

  • Biltheman yes there is a way to freeze cake after you have baked it and frosted it. Its an american trick. You need plastic and tin foil. It works well with cakes like carrot and zucchinni cakes.
