Your suction seems kinda slow, well atleast not ideal, like 30 secs. (even with the new method i believe its probably too slow, could be wrong though) The quicker suction down makes a more even coffee, and better. You can adjust the grind coarser and have a longer brewing time. Or using the towel method, but i believe the latter can crack cheaper models( idk how strong your si) try the former/coarse/longer method first.
oops a i forgot first try making a full pot, there is less air in the bottom, so it makes a better pot. I at first didn't see you make a partial pot. The other option is possibly scoop 8 oz of water after the water siphons up. The full pot though does improve taste.
You need the heat to keep the coffee brewing upstairs. As soon as you remove the heat there is a vacuum create in the lower globe sucking the coffee down.
Also the steam keep the temperature from dropping and provide agitation.
There is variation, Now I prefer a higher starting temperature and only add coffee when all the water has come up.
You have to heat the water to a near boil before inserting the funnel, otherwise you're brewing your coffee with cold water!

I think yuo should put the heat source aside for a while in order not to let the boiling gas distrub the brewing coffee.
