Hey Chef, did you ever eat Pumpkin balls in Honey? It's awsome! It's really sweet, but with the taste from the pumpkin matches it perfect! It's a bit hard outside but inside it's like butter. I eated that in turkey ;) Thanks for the video.
It needs to be noted that Sugar Pumpkins are preferable to the Jack-O-Lantern pumpkins used for carving. Even with sugar pumpkins, however, the flavor will not be as strong as found in canned pumpkin purée. Canned pumpkin (i.e. Libby's or organic varieties) is generally of high quality, and for most people, pumpkin is one exception to the "fresh is better rule". Much less hassle than using a raw pumpkin---the stringy fibers inside are very tedious to remove, and the roasted product is bland.

I am glad you did this video. I don't know why anyone would buy canned pumpkin when fresh is available this time of year. The pumpkin can also be boiled to puree, but the way you did it is easier and yields a better flavor. You also cannot beat roasted pumpkin seeds for one of the most delicious and healthy snacks ever.
Once you make the puree you can freeze it for up to 6 months. That way, whenever you ever get the urge to make a pumpkin based recipe, you have fresh pumpkin ready to go!
Serious question: Is there a lot of food coloring in pumpkin puree from the store? Why is that stuff a deep orange, while yours is yellow? Do they add brown sugar?
last time i did it, used the pumpkin we grew outside, but it was pretty watery. even after i strained with cheese cloth. needless to say my pumpkin spiced cake was dense... :(

Does it make a difference baking before or after you remove the skin?
I'm thinking a potato peeler before it's baked would reduce the amount of wasted pumpkin.
