  • do your potatoes always cook through? I hate it when they don't... I found a trick is to par boil the potatoes...

  • @GuyJon57 Yes they cook through. Perhaps not enough liquid? I suppose you could par boil. I have a similar recipe posted here with them just cooked in a pan.Scalloped potatoes I think. This is more cheesy than those. KtC

  • @GuyJon57 Here it is 'Pan Scalloped Potatoes and Cheddar'. Just search on that. It doesn't have as much cheese. A variation on potato gratin so to speak. cheers! KtC

  • I made it couple months ago, it was wounderful! But I think if you put in some minced meat, it would be more great.

  • @a1221th I am happy you enjoyed it. The loose meat would be tasty and would make it a meal in one as opposed to a side dish. I like diced ham sometimes myself. Certainly a recipe to experiment with as even trying variable cheese is a good idea (I do this too).

  • What kind of cream is the "heavy cream". What is it made of, and where can I find it?

  • @0rioni Heavy Cream is also know as whipping cream. Measured by the amount of Milk Fat (M.F.)

    Low fat milk = 1% M.F.

    Coffee Cream = 18% M.F.

    Heavy Cream = 25% M.F.

    Depends where you are? What it may be called there and availability. You can always use just milk but the creamier the better. Hope this helps. cheers, KtC

  • At least 10% (half and half). You could use regular milk but why not add onions, egg, flour and have scallop potatoes? The gratin is usually simpler yet richer in texture (and of course crispy on top). Scallop tend to be more saucy. Both are good. cheers! KtC

  • go no lower than 10%mf on the cream. (it then becomes more scallop potato). This is a 'heavy' dish, no doubt about it. The rich cream and choice of cheese makes it. (and how well the 'gratin' is done, without burning). cheers! KtC

  • Cool .not sure what 10% Mf means though.I wish the world had a standard for this stuff as we are taught stupid in This country.LOL.

  • milk fat percentage (of butter)

    80% = butter

    36% = heavy cream (whipping cream)

    18-30% = table cream (coffee)

    10% = half and half

    3-4% = Whole milk (N.A. Standard)

    1-2%= low fat milk

    less 1% = skim milk

  • You might give evaporated skim milk a try. It is nice and thick and creamy, and also fat-free. Or even maybe a combination of it and half and half.

    Hey KtC do you have any recipes coming up for Thanksgiving? I want to do a side dish with green beans but not the usual Green bean cassarole...Any ideas?

  • How about a simple steam/ boil bean with a sauce of season butter with saute almonds? (melt butter, add toasted almonds, pepper/salt. drizzle/ pour over steam/ boiled fresh green beans) yum. add a squirt of lemon for 'zest'. cheers! KtC
