It's physically back breaking work, which is a painful issue.
The work is done by people who live here in constant anxiety of being physically uprooted, starved and dumped back into a third world country where dogs are fed tortillas if at all. Besides the fact that all of the southern states had originally been claimed by Spain, and stolen by the US, there is considerable karmic guilt to be repaid. It's hard to forgive, and it's difficult to admit to guilt, but it's necessary to reconcile.

this terrible poverty and lack over the years.
He's from a ranch called "La Tinaja del Refugio" located outside of a small town
called "Apaseo el Alto" so small that the taxi driver got lost trying to get there.
And yet infiltrated by the Mafia.
My husband has a childhood friend w/ an upholstery shop who pays protection money, like in "The Godfather" to keep it safe.
