texturising the milk is when you place the wand tip under the surface of the milk when steaming. What you called texturising is actually tapping and swirling, to achieve a "wet paint" finish.
I bought the 800esxl again and this time I got a defect free machine. Seriously, I had to return the first two machines because they had problems like leaking all over the counter on the first shot and a dribbling steamless steam wand. The second machine vibrated like crazy so much that the water reservoir wouldn't stay put but kept creeping out of its nook.
I tried about 5 different espresso machines after that and none of them game me the great shots like the Breville 800.
I love coffee. The coffee is hot, your hot and the machine is hot and am getting hot just by watching you hot lady. The entire Video I was just looking at you so I had to watch it again, but I couldn't. Everytime I decide to follow what you said I find myself looking somwhere. Let me try again ;-)
Just a note about the pitcher in this video. The Breville 800esxl comes with a frothing pitcher but NOT like the latte art kind with the pointy pour spout that this lady uses. It comes with a pitcher that has a flanged edge without a pointy spout that is required to direct the flow of the foam to create a heart or other latte art-work as seen in other youtube vids. The Breville ESP8XL, however, comes with an 8 ounce pitcher similiar to the one in this vid plus a set of cups and saucers.

get yourself a thermometer, and stop steaming the milk on 55-65°C ...more than that you just burn the milk....that solved my very same problem
