  • hey Brian .. thank you so much for this recipe presentation. i cannot pinpoint the reason (maybe your calming 3rd grade teacher tone of voice?) .. but your video just cured me of my seitanophobia. soon after becoming a vegan in june 2010 i purchased some powdered seitan by the pound and read tons of recipes online. daunting. scary. time-consuming. after 4 months i tossed the stale untouched stuff.

    now i know i will soon buy it again .. and this time do it! thanks again.

  • @TwiPrime I actually made the sausage but boiled it in broth and cheese cloth instead of steaming in foil. have used this dough with my combo of seasoning and made them hamburger patty size in broth. I don't think you can mess up any of the recipes it all comes down to the flavorings. I love not having to knead.

  • Great Recipe, healthy and tasty. Vegan and Vegetarians never have to give up taste and the best part about eating vegan is it's cheap and you can eat as much as you want and never have to worry about cholesterol and all the nasty hormones in meat and dairy.

  • Wheat is not healthy. I got rid of that looong before I even stopped eating meat! Wheat AND dairy are major bad foods. Pure wheat gluten is the concentrated version of this bad food. This sticky gluten creates mucoid plaque in the digestive system that clogs your ability to absorbe nutrients. This is the truth.

  • Before I was vegetarian, I liked my corned beef nice and salty, would not adding the molasses keep that salty flavor and make not not sweet? I don't thing I would like sweet corned beef.

  • I'm a vegan, and I love seitan. My boyfriend and I made this dish for my family last night. We followed everything step for step and were super excited for the final product. After cutting off the cheesecloth and trying a piece we discovered it tasted nothing like corned beef. it was more like dry meatloaf. I would highly recommend NOT making this dish if you are a former corned beef lover, or are thinking of trying it out on meat eaters.

    Try mixing Earth Balance with freshly grated horseradish.

  • Nice spice blend. Kneading gives the seitan texture otherwise it is rubbery. I have tried it so this must be kind of rubbery in texture? I add 1/2 C Dark Red Kidney beans, blend liquids with beans in blender then slowly add the dry until a dough forms. Then knead well. Rest, Knead again, scissor in thick strips then braise at 350 in a covered baking dish with a little stock with red wine vin. 45 covered, turn , replensih with 1/2 C stock then uncovered for 15.

  • I look forward to trying this. I've been making the turkey roll for awhile, this one is new. I'm experimenting with making a fish version of this recipe with seaweed and mushroom for flavoring....

    And to the meat lover, I am NOT a vegetarian. I eat seitan because it's close enough to meat, at WAY less the price. Have YOU checked the price of a corned beef brisket lately? And my seitan chicken nuggets certainly taste better than the real thing. Factory farmed meat isn't something I eat in any case. Inhumane killings, and dubious quality. I raise my own chickens and eggs, but for the rest, it's seitan. You can have that e.coli crap they sell at the grocery.

  • Natural or not, I feel best when my diet is mainly composed of cooked animal. I believe that it has become very trendy for people to consider meat as bad and unhealthy, I feel nothing is further from the truth. Meat has a list of health benefits that make just about every other food (except eggs) look pretty weak in comparison. From the high quality absorbable amino acid profile to the very absorbable iron it contains, meat is a great food.

  • I'm not vegan nor vegetarian, and I'm Chinese. I grew up eating seitan. I eat it not because of the need for extra protein, in which seitan is very rich, but because it is delicious! Thank you for your recipe, which I think would be very popular in Far East Asia, which has a lot of vegetarians/vegans, and where a lot of them like to experiment with new tastes!

  • Wow! That looks delicious! During St. Patty's day when I was a kid my mom always made corned beef and cabbage, which I sorely missed when I became vegan. I'd love to share this recipe with her as she's now vegetarian herself!

  • How is it "funny" to you? When you grow up eating real meat it is rather difficult to adapt to a new lifestyle such as vegetarianism/veganism. Do not knock it until you have actually experienced the change. Do not hate, it isn't worth it.

  • Most vegans werent born vegan. And especially for newbies, its easier to switch to vegan, if you have foods that are similar.

    also, many people like the tatse of animal products, they just dont like the cruelty involved, so they have fake versions.

  • Haha, that's an imortant question that is not often addressed among us vegetarians. I think what it comes down to is our conditioning as we grew up. I don't know many vegetarians who were raised as such, and omitting meat straight out poses an issue...since we KNOW meat tastes GOOD. It does, disgusting as it may be. But kowing the source definitely ruins the fun.

  • I'm Vegan and although it is ABSOLUTELY wrong to kill animals to eat, they do taste good. They smell good and taste good. That's the only reason people eat it. So, if we come out with products that taste like meat, theoretically, more people will go vegetarian because they wont have to give up that 'good' taste. And more animals will be saved :D

  • I love your recipes!! I cant get hold of gluten flour here..would it be ok to use bread flour? Obviously when your boil it more starch will come out..but do you think it will work at all?

  • I think you can do it with whole wheat flour... Not the really starchy white flour.

  • you get gluten from wheat flour. Just take flour made from wheat, mix it with water so you get a dough that's just barely sticky. Let it rest in cold water for 2 hrs and then rinse it in hot water 7-10 times. What's left is the gluten.

  • where did u get that information from? I did my own bit of research, and found that the results are incunlusive and not enough evidence has been found to prove that gulten has a negative affect on the human body. An expermient was just completed in April 2008, but the results have not yet been released. I guess we'll just have to wait for the definite answer. By the way, I may be slightly biased though I try not to be as I am vegan.

  • I cut out all grain products from my diet and feel like a new person. Eventhough I don`t have celiac disease, I can feel a huge difference if I eat gluten or not. The human being is not prepared to eat gluten. Grain products have only been around for a few thousand years, whereas veggies, fruits, fish and meat have always been a source of food for the human beeing.

  • I'm sure you will be pleased to find out, then, that science has recently come into a preponderance of evidence stating that red meat is unhealthy and can lead to many health problems for the individual who consumes it regularly.

  • Being one who adheres to a strict vegan diet myself, I'm gonna give this one a try. I'm one of those guys who hate preparing foods but love eating, so I usually just go to stores that cater to vegetarians and buy all those already prepared, just heat-and-serve goodies.   • try with seitan (substitute beef), just try it and you will see its delicious. As Medracin said, noone can force you to be vegan but for the sake of the animals, i hope you at least, give it a try.

  • I haven't had a ruben sandwich in since going vegan. I just may try this. His technique with not kneading the gluten and using cheesecloth looks like a good option for making seiten. I recently made seiten and the outside was a little spongy(maybe I didn't knead my gluten long enough)

  • The outside will get spongy if you let it boil too high for too long. You want it to simmer, not boil. The recipe for Simple Seitan in Veganomicon explains it pretty well. Hope this helps. :)

  • I did eventually try the seitan recipe from Veganomicon and had much better luck. Now, I make seitan regularly and yes, I finally had my ruben sandwich. I don't particularly care for cheese(vegan or otherwise), but my ruben sandwich still turned out great. Thanks for the tip--seitan is so versitile.

  • Sheese is a delicious vegan cheese product made in the UK. You can also find it in stores in the US and I think Canada too.

  • sheese is not that great IMO try to find cheezly, that stuff melts like real cheese, mozarella/darkcheddar/lightche­ddar/feta/etc they have alt of different flavours
