Great video you guy has such a endearing manner - glad he showed pressure in operation unlike some demos. After marinating the chicken/meat I would give it a quick braise/seal in a hot frypan for a couple of minutes in some cooking oil to stop it looking anaemic and then pop the meat in the pressure cooker then add the rest of the lovely ingredients suggested and it will be even more blissful...try this method and let me know if it is an improvement!

My pressure cooker locking pin won't raise up, steam just keeps shooting out of the locking pin hole. The lid seams to be lined up what's wrong. The pressure cooker is really hot too.

With that type of stove,you might want to use two burners. One set just high enough to maintain pressure. The other high so as to bring the cooker up to pressure quickly. By the time you reach pressure, the lower burner has had time to reach and stabilize at the cooking temperature.And so you move the pressure cooker over to the second burner and shut the first one off.

Even if you intentionally keep the cooker on high heat and try to build enough pressure to make them explode, an emergency valve (a hole with a small fusible that will break if the pressure is too high) will release the excess pressure. I agree though that the old models do not have any of the safety features, so they were dangerous at the time. I now own and the time I save is awesome!

It stayed in my kitchen cupboards all this time until i saw this video. I had never used a pressure cooker before, so i was afraid it may explode / burn me as i was unsure on how to use it correctly. this video is simply wrong. most pressure cookers do lose lots of water cooking: if you fail to realize that fact you will burn your food in the pressure cooker. i like hawkins brand but there are a few good ones for under 50 USD
I had bought my pressure cookers at Brands Mart USA for $25+tax. I love it! I was scared to use it at first because the instructions didn't say how to use it. It just focused on making sure the lid is properly closed. This video was helpful. The recipe he mentioned in the video and the food came out way too sweet since it has dates and apricots in the ingredients. I noticed that it does lose water and you have to add water to it. If you don't your food will stick to the bottom and burn.
Try a beef roast in a pcooker..Holy crap is it great! 4 lbs meat, 1 onion, some soup base or bouillon, just about cover with water/stock, 10lbs pressure for 1 hr...hr 15 and you have a roast fit fer a king. serve wit boiled taters...yummo!!
There really is no point - bring water to a boil, pour in rice, boil for 5 minutes, let sit for 15 minutes. To use a pressure cooker is to use an elephant gun to kill a fly. Unless you are cooking brown rice, then maybe, but even so a retained heat flameless cooker would make so much more sense.

I have a Fagor pressure cooker that I have been using for over 10 years, it makes excellent beef stew in under an hour using cheap cuts of beef, carrots, potatoes, onions, celery. After opening the pot I add water with flour mixed in to thicken the gravy, also put in a teaspoon of gravy master.

The Jamie Oliver Pressure cooker is expensive but it has an electronic timer and is easy to use. You can also use cheap cuts of meat because cooking in a pressure cooker tenderises it.
Looks like a 6qt size? It's Kuhn-Rikon, one of the higest priced cookers. It's Swiss-made. But if you don't want to spend over $200 for a pressure cooker, there are very good economy-priced alternatives. Presto's products have the "jiggler" type pressure regulator. Fagor is a "new generation" pressure cooker, with a spring-loaded regulator. Both are excellent choices, with similar safety features to the K-R. Replacement parts (gasket especially) are readily available.

For good browning, the meat needs to be dry, so this is difficult after the marinating. However, the meat may be browned before it is marinated. This would combine the Maillard reaction, with the marinated flavors. But, perhaps the browning is not a step in this recipe if one is going for authenticity?

There really is no point - bring water to a boil, pour in rice, boil for 5 minutes, let sit for 15 minutes. To use a pressure cooker is to use an elephant gun to kill a fly. Unless you are cooking brown rice, then maybe, but even so a retained heat flameless cooker would make so much more sense.

Thanks. I too came to the same conclusion. Looking for an alternative to the tephlon-pot rice cooker was what sparked my interest. But I found stainless steel rice cooker model.

I have a Fagor pressure cooker that I have been using for over 10 years, it makes excellent beef stew in under an hour using cheap cuts of beef, carrots, potatoes, onions, celery. After opening the pot I add water with flour mixed in to thicken the gravy, also put in a teaspoon of gravy master.

The Jamie Oliver Pressure cooker is expensive but it has an electronic timer and is easy to use. You can also use cheap cuts of meat because cooking in a pressure cooker tenderises it.

Looks like a 6qt size? It's Kuhn-Rikon, one of the higest priced cookers. It's Swiss-made. But if you don't want to spend over $200 for a pressure cooker, there are very good economy-priced alternatives. Presto's products have the "jiggler" type pressure regulator. Fagor is a "new generation" pressure cooker, with a spring-loaded regulator. Both are excellent choices, with similar safety features to the K-R. Replacement parts (gasket especially) are readily available.

Thank you. Thanks a million. You don't know how the pressure cooker has influenced my life. It has brought family dinners to a whole new level. I never knew that during the 30 minutes I saved cooking rice that I could have some quality time with the fam. What do you think of t-shirts with the slogan, "Pressure Cook This" with a list of all your tasty pressure cooker recipes on the back? Just a thought.

Thank you. I'm no longer a pressure cooker virgin. Thanks to your inspiring video, I have put my new Presto Pressure Cooker from the Arc to great use. It's an ancient piece of equipment, but the beauty of the pressure cooker is that it never goes out of style. Right now I'm eating 10 minute rice. 10 minutes!!! Can you believe it?????? I'm having a dinner party and was wondering if you have any tasty recipes to share via video?

For good browning, the meat needs to be dry, so this is difficult after the marinating. However, the meat may be browned before it is marinated. This would combine the Maillard reaction, with the marinated flavors. But, perhaps the browning is not a step in this recipe if one is going for authenticity?

My mother used one fairly often, with good success. The valve gave a chiming whistle when pressure was attained.
I was still a little scared to use it myself, but eventually learned to.
It is quick and gives great results.
I no longer have that cooker *snif*. I suppose I shall have to buy a new one... (BTW, they have not changed all that much. Low tech is new tech)

My pressure cooker manual says you have to have about a quarter of a liter of water each time you cook something, but you didn't really use any water, is it special to your cooker or?

Liquid requirements vary with different pressure cookers, and according to how long the cooking is timed for. Some pressure cookers lose more steam than others, but all are very efficient if used properly. Yes, there was already liquid with the marinade in this demonstration.

I've used a pressure cooker since I was a kid learning to cook. Generations of my family have used pressure cookers -- with only one mis-hap.
The worst thing that ever happened was an entire roast liquified and shot up through the pressure valve when the rocker was taken off too early... Grandma never got that stain off of her ceiling!!! LOL!
If you pay attention to it, like all other cooking, then there is nothing to be afraid of ... and pressure cooking is much quicker!

While your manner and presentation are good, it's really hard to tell what constitutes "under pressure". Yup, lids locked. Is any steam coming out? Should it be? Good from a "don't fear the cooker", but not so helpful for us beginners. Thanks anyhow.
