People...pay attention...he brined the eggplant which is necessary to remove the excess moisture, but he didn't rinse them...any idea how salty that would be??? I would ruin the dish. He is on the right track, but search and view other recipes...if they don't brine AND rinse, don't waste your time and ingredients.
@pattigirl17 the salt didn't seem excessive to me. He describes the red sauce as being "crushed tomatoes" so perhaps the sauce isn't salted. In any case, the European palate enjoys some saltiness, and I do to.
