  • You might want to try sauteing some garlic in olive oil, then fry up the eggplant. You can also slice it horizontal, so you can fit them symmetrically in a baking dish. Glad to see you used salt and let the water drain out of it though.  A lot of people don't do that and it becomes very bitter.

  • Sliced the eggplant too thick. 1/4 to 1/2 inch thick. Other than that, looked good! I personally like the mozzarella on the top, but that's a personal preference.

FYI the chef is Italian from Italy and it is simple and delish!!! It is posted by italian food network. Oh yeah he speaks italian and he's not bad to look @ either.

  • People...pay attention...he brined the eggplant which is necessary to remove the excess moisture, but he didn't rinse them...any idea how salty that would be??? I would ruin the dish. He is on the right track, but search and view other recipes...if they don't brine AND rinse, don't waste your time and ingredients.

  • @pattigirl17 the salt didn't seem excessive to me. He describes the red sauce as being "crushed tomatoes" so perhaps the sauce isn't salted. In any case, the European palate enjoys some saltiness, and I do to.
