Well it's the "flipping them over".

This guy IS an idiot, nurse sharks are arguably some of the least aggressive shark species. What he is doing is instigating tonic immobility in the sharks. It's not the petting and kissing they enjoy, it's the flood of serotonin they get when the network of nerves is overstimulated by being flipped over or having their noses rubbed. Try doing this with a Mako or some other open ocean shark and he'll be needing 4 times as many stiches...if he survives the attack.
