can do but if you use sweet mead yeast then your only going to get it to work on 80% of the total sugars and it turned out around 9% it stopped at around 1010. sweet merad yeast can get to 18% before you start to get to off flavours.
i dont always bottle carbonate these last few brew's are either like wine and served flat or im doing co2 carbination for that perfect carbonation result.
the big danger with bottle carbonation and mead is it will be a bottle bomb. so you have to crash them or take the chance it will coat your storage space in the nectar of the gods.
So to get the % Alc you are basically just subtracting or adding the enitial reading and the end reading, correct?
