  • I've got a pretty good tip that will help save you a towel and help clean the grill at the same time. Take a few paper towels and put them in some aluminum foil and pour oil on them before wrapping it up. Next, poke a few holes in the bottom and use the tongs to keep your hand away from the heat. The end result is the aluminum foil cleans the grates while the oil lubricates them, plus the foil protects the paper towels from burning. Hope this helps.

    Hello. You can get a nice grill for $400. An all stainless steel grill will cost more, but they will hold up to the test of time. I usually go by the old rule of thumb. If you are going to use it a lot, invest in quality. If you are not going to use it a lot, save yourself some money. Check out costco.com for some grills.

  • Does coating the grill with the olive oil cloth help with getting good grill marks in your meats? Usually when trying to achieve the grill marks, I end up having meats stick and fall apart.

  • Probably need to leave the food on there a little longer so it doesn't stick. I usually get my grill pretty hot and then rub the grates with olive oil. Or use Canola Oil instead, it holds up to the heat better. As far as burgers go, they usually have enough fat content that they don't stick too bad

  • I am very careful in the kitchen with cross contamination of fresh and raw foods. I never even thought about it at the grill. Thank you for raising awareness on this issue. We r big barbecue fans down under in Australia also.

    I always wanted to know what is up with foil?

    Do you have to use foil to let something rest? It seems like a manufactures urban legend to me is all. If I have to cover it, can I use a corning ware dish with a lid instead?

    I liked the tip on sliding the steak before letting it sit to grill, very wise and I did not know.

    Will it work with chicken too?

    I use Charcoal mostly but some meats are better without. Anything that takes 10 min to cook would be a waste of time to start a 2 hour fire taking 30 min to get it started. You have very valid point for using a gas grill.

  • we have a happy medium here. My wife likes the ease and quickness of the gas grill, I prefer charcoal. It's the best of both worlds.

  • I just never could bring myself to get a gas grill chef, the smoke you get from the charcoal brings a lot of flavor to the food. Its not wrong to use gas, I'm not a purist, i just don't personally like it.

    No problem. But remember, once your coals are hot and ready, they really are not producing a true smoke anymore. When grilling, a lot of the flavor comes from the meat on its own just being cooked over a high heat. Seasoning and/or marinading the meat before hand opens up a whole other discussion.

  • yeah, thats very true. I keep a supply for woodchips around to lightly smoke meats like burgers and steaks. Chicken thighs do the work for me cause the fat from them. Thanks Chef, I still enjoyed the video a lot. I hope you didn't think I was criticizing you

  • Marinating your meat with whatever you choose should take overnight ideally, but I'm no chef.

  • Do you only cook your pork to 150F because carry over will take it up to 160F, or do you think 160F is overcooked? I thought you had to have it at 160F to kill things like trichinosis?

  • Yes, it will continue to carry-over cook to 160 F, which is perfect. If you take it off at 160 F, it will carry over to about 170, which would slightly overcook the pork. It's a bit tricky.
