Lila, I was recently at a store called HyVee out of iowa and they had a Classic Garlic Chicken. It was just like the garlic chicken of my youth at yu's mandarin in Hoffman Estates, IL It contained slices of chicken breast, whole straw mushrooms, water chestnuts and this dark sauce I think someone once told me it was a black bean sauce. but it was garlicy and it was exactly like it here at this Hyvee location. Can you please offer this recipe for the Classic Garlic Chicken Please?? thanks!!
This looks nothing like what I had at the restaurant. Their sauce was much darker. They also had it spicy with red chili flakes but it tasted so good.

There are several things you can add to make this spicier - crushed chili pepper (for heat), hot chili garlic sauce (for heat and flavor), chili oil (for heat), crushed szechuan peppercorns (for numbness- not really hot though). I also sometimes add a hot sauce to my own portion called "Dave's insanity sauce" -just a little drop of this adds tons of heat without really changing the flavor :)

@Mojosfire The oyster sauce is the main base of flavor for this recipe. They do make a mushroom oyster sauce which does not have any seafood in it that you could use as a substitute. You could also leave out the oyster sauce and just add an extra tbsp of soy sauce as well, but the flavor will be a bit different :)
Hi is peanut oil the origional oil used in china and is this oil high in fat/colesterol . you make everything look easy :) do you have any duck recipies ? thank you

The peanut oil that I use has 14grams of fat and 0 Cholesterol in a serving size of 1 tabelspoon. I will be posting some duck recipes soon and Peking duck too. Thank you for writing and watching :)

@thankfulandblessed Oyster sauce has a unique flavor that greatly adds to this dish. There is not really anything that can replace it that would not change the flavor quite a bit. They do sell a vegan oyster sauce that is made with mushrooms which is pretty close in flavor and would be the best substitute :)

quite concern about your nails, too long for a professional cook. I also have seen your show for preparing dough and could not finish when you have difficulty mixing the mixture by hands because of your long nails. I'm sitting down to eat this recipe for the first time right now and I must say it is fabulous! I was a little worried when I added the sauce, the smell was a little unlike what I was expecting, but you can't argue with results! :)
Just use 2 cloves of garlic, and to the sauce, omit the oyster sauce and add 2 tbsp rice vinegar, 1/2 tbsp sugar, and 1 tbsp crushed sichuan peppercorns. If you can't find the peppercorns, you can just use hot chilis :)

Yes you can add a little to the sauce; either the bean paste or some hot chili garlic sauce. If you want just heat in the chicken, you can add a little chili oil to the pieces when you mix in the garlic salt :)
