if you don't have a mandolin, and need to slice your potatoes by hand, I've found that microwaving the potato slices for about 5 minutes before you layer them helps to even out the cooking and makes them a bit more uniform. :)

I like to use raclette instead of cheddar as it gives a creamier, less sharp taste.
