There is only one monster. JJ Abrams and Matt Reeves confirm this in the promotional interviews they had. Plus the Making Of documentary on the DVD has a section about the designing of the monster (notice the lack of the plural "s") and they refer to Clover as "him" and not "they" which they would have, if there was more than one animal. Just Clover and the parasites. Rendering them in different camera angles and lighting can make them look different, Matt Reeves also confirms this.
