@mariacuto....basically it's a compund in wheat and other grain (barley, rye)...it's the "glue" in those grains, which later in flour for example gives elasticity to dough/porridge etc...some ppl are gluten sensitive and cannot tolerate gluten..they get major health problems..

I have never heard of jaggery before but thanks for the information. Can you use Grounded Brown Rice instead of the white rice in this recipe???? Since brown rice has more fibre.
