They will taste much better if you cook them longer by adding more water or in slow cooker and easier to eat too.
what my mom dose is just boil them well we boil the hole chicken including its liver, gizzard, heart, and the feet and put some potatoes, vegetables and some salt and some seasoning oh and garlic and onions and i think that's it but it tastes really good
its not fat in those feet but gelatin and tendons.
