HDMI can have alot of compatibility issues with some hdmi inputs. While it doesnt seem like its ur tv. Its prob just how the tv accepts hdmi. PS3 HDMI is top of the line HDMI. Alot of certain TV's with hdmi have issues accepting the signal.

HDMI on my 360 has a faint hard to see compression window you can see if ur close to the tv while my ps3 is crystal clear. Its just compatibilty hicups. Same with your sound issues.
