As the water evaporates from the syrup, the sugar concentration increases and allows for the creation of denser molecular chains and polymers that make it look brown.

@xoxoangelxoxo99 Well, most any food turns brown/black when it's introduced to heat/fire. It's called cooking or if you're unlucky - burning :) :) :)
