I had a set of Chicago Cutlery but didn't care for them. I now have a full set of Wustof Classic Ikon, which are just amazing in quality and come with a lifetime guarantee. I also have a Kyocera ceramic blade that I've had about 3 years now. It's really good for chopping soft vegetables etc. I guess it's personal preference. Even though I'm no chef, I just like to have a good quality product. Thanks for the video.
I love that he knows all the names to the knives! I just call them "hey get that big knife, no the smaller one, no that medium sized one, no not that one." I didn't know they had names, i'm so impressed.

I seem to have a load of knives in my kitchen that I've acquired over time, many the same, and many are a mystery to me! Well that was until I watched this video! Rick,"Rada" makes an incredible knife that has an aluminum handle and a very nice serrated filet like blade. Wife bought one and I insisted she go back and get five more.

Nice video. Nice to see your face, Rick! I am sorry to confirm that MrEZCooking is absolutely right about the diminished quality of the Chicago Cutlery brand. I own a set that is approx. 30 years old and has been well maintained. They are wonderful knives.
Recently I was in the market for a set for my son and looked to the Chicago brand. I was quite disappointed with the quality I found. Cheaper metal, cheaper wood, lighter weight. I was able to find much better quality elsewhere.
i liked this video, it was informative and a good change of pace i think. i agree with some others that other informative videos would be good as well such as on pots and pans and other tools in the kitchen. next time perhaps consider doing the camera free hand though, as the tripod views were slightly cumbersome; fine video though.

Also, on a separate note, Rick, I've long been impressed with your video taping skills. You do a great job showing us exactly what we need to see, panning naturally between Betty and the food. Like, stainless steel vs aluminum, thin/heavy ones, enameled ones, etc. What I love about Betty's kitchen isn't just the wonderful recipes and Betty's way of presenting them, but the tips and things like this :) She really should have a cable TV show.

Awesome video there. I'll have to admit that I was shocked quite much when I saw that huge collection of knives, but you DEVINITELY saved it when you said that most of them aren't neccessary. I love my chef's knive even if it's a crappy cheap one, I don't even really use another one at all.

The four essential knives needed in any kitchen: the Chef's, the paring, the bread and a good size carving knife, thanx a mill Rick i learned something new today,...ya know i worked in a restaurant during my teen years and the amount of knives they had there and it was just the chef, his helper and the Boss lady, as for your home we all got a Ginsu knife(1979), it still holdin' up sharp, bought mailorder back in utah, but these basic four would be the best to have!! Thumbs up to ya Rick!! = )
Betty and Rick, have you ever used a porcelain or ceramic knife? I heard it's really heavy but it's also very sharp.
I'm thinking of buying one and trying to compare the advantages and disadvantages of a ceramic knife. I just wondered if you had experience working with such a knife before.
@bee5120 Rick here--no,we have not owned a ceramic knife. I do understand that they are quite sharp and hold their edges for a long time. The two drawbacks are that they are pretty brittle (and easy to break) and probably can't be sharpened at home when it does become necessary. Probably worth a try.

Great video and I couldn't agree more. I have a $4 Forschner paring knife and a 10" Chicago Cutlery chefs knife I got at an outlet store for $10 that I use 99% of the time. I tried a Santuko knife like Rachael Ray uses, but I always go back to my chefs knife. Same for the $50 Wustof sandwich knife I got, I never use it. I say keep it simple, cheap, and as sharp as you can as far as kitchen knives go.
This was one of the best Betty's videos! Being form PA and a knife guy I like Case knives, obviously not kitchen knives. I also like Cutco - I know, I know - but from Albany NY. Also have had Wustof.
Personally I carry a Case or Victorinox pocket knife. If you know how to use them they are VERY useful!
I'm going to Ebay now and looking for "vintage" Chicago Cutlery. Wife (Mrs p6) and I have a Cutco Sontuku and a couple of other styles but are looking for a nice "set".
Hopefully RIck will do a followup on keeping cutlery sharpened. Since I use my (pocket) knives daily, kitchen and more and am VERY hard on them I go through at least 2 Victorinox a year. Mrs p6 tries to keep me away from our kitchen cutlery, hehehe!
There is a big knife place in the smokies near Dollywood Mrs p6 and the family go to but my schedule doesn't allow that. They think I should go there to find what I want, kitchen and otherwise.

I am forced to disagree with Rick that you only really need a few knives from the complete set. I sometimes go several days without washing dishes so the rest of the set comes in really handy at that point.
It's so very true that you only need a few knives. I bought a big knife set a few years ago and haven't even used some of the pieces. There are 3-4 knives I use all the time and the others just take up space! Thank you both so much for the great videos, they truly are a joy to watch.

If those are old Chicago Cutlery knives the steel was produced for them by the Schrade Cutlery company. Today the Chicago Cutlery is made in Taiwan. Schrade is not longer in business after 125yrs. It looks like you either use Linseed oil to coat the wood on your grips or the old fashioned laquer or shallack! or even urethane to keep the water out and keep the wood from cracking. Not a bad video! Betty's much easier on the eye's though!.....:)
Very good discussion Rick, and your recommendations of the core set of knives is correct. I do use my boning knife quite a lot, it's great for cutting up a whole chicken. One knife I can't live without is a Santoku knife, it's great for slicing meat and veggies very thin.
I like my knives. I don't have as many since down sizing my life. I miss many of the things I gave away. Since my son left for university and now it's just me I resigned to live with less due to space after moving from a large home to a small apartment.

My Dad used to always keep my knives sharpened and in good shape for me. He also loved to carve the steaks, roasts and turkey and taught me how to use my knives.
I've owned a 10 inch Chicago Cutlery bread knife since 2005, so six years, paid $15 dollars for it, and it cuts cleanly just like the day I bought it, through the crustiest bagels and breads to angel food cake...I'd heed the old man's advice, Chicago Cutlery's makes classic American Knifes. No need for a carving or electric knife when you have one of these...really you only need about three knifes, paring, chef, and Bread. They will do 99.9% of all kitchen tasks.
Rick should be renamed slick rick, his flow was effortless and whilst he seemed natural he was not 'showy' at all. Very good work and Rick you can count yourself in good fortune to have a talented chef in the form of your good lady.
You guys have an electric knife? I'm thinking about getting one for use on the chicken rotissery i do once a month. I like this channel because i learn alot, its always explained very well and i think Betty is from a dairy farm like me. Wish she would do a video about that.
@jasonmushersee Yes, I have an electric knife--and I love it! I almost always use it for slicing soft bread or cake. It makes a slice of cake look so perfect! An electric knife would work great for your rotissery chicken. Yes, I grew up on a dairy farm, but I doubt that many people would be interested in me revisiting those days! In fact, I did treat the handles by dipping them several times in tung oil or Watco--can't remember which--and using fine steel wool in between.

Very good discussion Rick, and your recommendations of the core set of knives is correct. I do use my boning knife quite a lot, it's great for cutting up a whole chicken. One knife I can't live without is a Santoku knife, it's great for slicing meat and veggies very thin.

I like my knives. I don't have as many since down sizing my life. I miss many of the things I gave away. Since my son left for university and now it's just me I resigned to live with less due to space after moving from a large home to a small apartment.
Rick, Great presentation on knives! :)
My Dad used to always keep my knives sharpened and in good shape for me. He also loved to carve the steaks, roasts and turkey and taught me how to use my knives.

I've owned a 10 inch Chicago Cutlery bread knife since 2005, so six years, paid $15 dollars for it, and it cuts cleanly just like the day I bought it, through the crustiest bagels and breads to angel food cake...I'd heed the old man's advice, Chicago Cutlery's makes classic American Knifes. No need for a carving or electric knife when you have one of these...really you only need about three knifes, paring, chef, and Bread. They will do 99.9% of all kitchen tasks.

You guys have an electric knife? I'm thinking about getting one for use on the chicken rotissery i do once a month. I like this channel because i learn alot, its always explained very well and i think Betty is from a dairy farm like me. Wish she would do a video about that.

@jasonmushersee Yes, I have an electric knife--and I love it! I almost always use it for slicing soft bread or cake. It makes a slice of cake look so perfect! An electric knife would work great for your rotissery chicken. Yes, I grew up on a dairy farm, but I doubt that many people would be interested in me revisiting those days!
