Sakura and Itachi never meet in the anime. In the manga, during the rescue Gaara arc, they do meet, however, he says nothing to her, and she says nothing to him. all that she knows is that he's the one that made sasuke turn out like the little bastard he is. so, i guess itachi probably doesn't even know sakura exists. XD
