Zoro never lost a fight. Most likely he meant that he wouldn't lose to any swordsman because he did say himself that Luffy needs the greatest swordsman as he's gonna be the Pirate King. With Enel, all of them were actually at their limits and everyone was there. Kuma's, is all about honour. He was still standing despite the pain which I guess makes him the only person able to bear Luffy's agony. He didn't lose to that. :)
