He is left handed which makes it more difficult to cut because the most knife blades are oriented outward holding with your right hand. Unless if you buy a blade for the left hand.
@Verliebt The juice won't spit out to your eyes if your knife is really sharp. The problem is Western stylied knife is double-edged and relatively blunt compared to Japanese knife which is single-edged and thinner. If you use good Japanese knife, that won't make you cry.
@bakaanikimachisu it doesnt have to spit out in your eyes, just the smal vapors will be enough.
you can find single edged knives in the west too. that is not actually going to help that much.
the sharpness of the knife only affects how much juice come out, but no matter what, juice is still going to come out.
try a stanley knife, those are single edged, you still get juice to come out. an example of the knife ecx.images-amazon. com/images/I/21NUddJAb4L._SL500_AA300_.jpg
@Verliebt apparently you don't know anything about Japanese kichen knife, and the tech of cutting vegetables.
Japanese kitchen knives are single-edged and thinner- much thinner than any Western stylied knives. And when they cut onions, they 'pull' or slide knife to their side, not pushing down like typical Western cook. Japanese knife actually helps great. Of course a little bit of juice may still come out but that's too little to make you cry.
A few reasons why we leave the roots in. One, it keeps the onion from bleeding out it's juice. Cutting an onion through the root doesn't release as much juice because you don't cut across the grain, which are the tubes that hold all the juice. Secondly, the roots keep the onion together as you slice through them. Without the root, the first few layers and the center layers will pull apart and actually make it more dangerous to slice. Although the Brunoise is the most efficient and time-saving w
@Ithicuss imagine a stem, onions are like a bunch of stems together, if you cut it lengthwise, you only cut a few, but cut it across and you cut all of them.
@Ithicuss Well you can't accurately cut a whole onion, it would be rolling all over the place! When you cut the root in half, it starts letting out all the juices that make you cry. But since you immediately turn it over, all that juice is underneath the onion so the fumes can't get to your eyes.
Cutting the root has nothing to do with why you cry. Damaging the cell walls of the onion releases sulfur compounds, which mix with the water in your eyes to make sulfuric acid. Cutting any part of the onion will cause tears. Adequate ventilation to blow the sulufur compounds away from you is the key.

@fpvshitsonhsv It's not about your nose... its about your eyes. The onions release acid which when mixed with the liquid in your eyes forms a very weak hydrocloric acid.. and therefore you cry to get it out of your eyes.
@haramie - Agreed. It annoys me when tutorials use fashionably choppy camera work, when they're supposed to be helping complete novices. He waved the onion around when he was telling us where the root end is, felt like a tease. His advice is good - but I'd have liked a bit of slo-mo (just now and then) so that the eyes can get everything down. By the way, no smug remarks about idiots who haven't mastered chopping onions - if you can expertly dice an onion in 8 seconds, I'm happy for you.

Instead of cutting vertically first, go horizontally, then finish with the downward slicing, your life and hand will much appreciate it....I can't believe he cut the onion that way. And always make sure your knife is sharp.
A small piece of bread or a teaspoon under your tongue will prevent you from crying when chopping onions. Bread tastes better but once it goes soggy it no longer works so have to chop the onion quickly. Wash hands in cold water to remove the smell from your fingers. My top tips :D
if your knife is sharp enough (i mean sharpened properly on a stone) you wont cry because the juice wont spill out of the onion... its not about the root and anything... get yourself a good japanese knife and use it properly.
