  • Definitions only work when they are observed by everyone in the industry. From place to place there are small variations on how to pour milk or the amount of coffee and milk and foam. Its better to tell the barista what do you like.

    To all English speaking/mumbling people watching this clip: This must have been an "How NOT to do a Cappuccino!" Cappuccino never had 1/3 coffee, 1/3 milk, 1/3 foam! Who established that? I have been drinking cappuccino for as long as I can remember and none had such ratio nowhere in Italy! It's 1 espresso with steamed milk & a slight foamy top! And you NEVER use a spoon! The Oops... priceless!:P

  • Everytime i hear from a customer 1/3 espresso 1/3 milk 1/3 foam i start to scream! For a Capp u will really need: 1 Shot of espresso and homogeneous steamed milk. Just as seen on 1.000.000 of Barista videos on this site.

  • @Acorli Haha I hear ya. Last week I had a lady tell me as I'm pouring her capp, "No, wait--not so much milk! I want a lot of foam!". I try to tell her as nicely as I can that's not really a capp and she tells me SHE'S been to Italy so SHE knows what a cappuccino is, blah, blah, blah.... :/

  • 6 ounces is a traditional capp. When they came over to America we screwed them up by making a capp a marketing scheme. There is no wet and dry either. There is a capp and a latte. I guess there could be an idiot beverage too. You should remove all of your videos about coffee, you dumb *****!

  • A true cappuccino is NOT 1/3 espresso, 1/3 milk, 1/3 foam. That is the wrongly made American cappuccino and they taste like shit. A true cappuccino is 1.5 ounces of espresso and 4.5 ounces of micro-foamed whole milk. Her cappuccino looks like whipped egg whites.. disgusting. Experts? Bullshit.

    Spoon? Look at How to Make Wet & Dry Cappuccinos video to learn some of different types of cappuccinos in existence.

  • No, the only difference between a cappuccino is a latte is the size. Caps are 6 ounces & lattes are 12 ounces. This lady made her cappuccino wrong. The milk should be microfoamed and you can do art on a cappuccino as well as a latte.

  • decent video- would have been good to show the frothing process in more detail esp when your making a dry cappuccino which can be extremely hard when it's a breve or whole milk cappuccino due to the higher fat content.

  • Bad editing. You can hear someone behind the camera say "action" when the barista is making the expresso shot.

    Also, it would have been nice to see some close ups of the steaming process. I just received a very nice Espresso maker for Christmas, and I'm trying to "see" how it's done (as opposed to simply reading the instruction manual).

    Is there a better video out there?

  • Yes, I too would have liked to watch the steaming process up-close. Also, it was a great video instruction for basic home Cappucino but - what about the spoon usage? Is that permitted in a professional coffee house?

  • FAIL!!! You do not use a spoon to hold the milk back...AND you don't "spoon" the textured milk in on top either. If I had that served to me, it would go straight back.

  • That's a latte with extra foam, not a cappuccino. For a true cappuccino you should pour the milk into the espresso BEFORE it has had time to separate--basically the instant you finish steaming it, you should pour, causing the perfect marbling effect of espresso and milk/foam. After pouring, the drink should separate ITSELF into espresso/milk/foam, while keeping the beautiful "marble" on top of the drink. This demo is a lazy way to make a "faux" cappuccino.

  • Not exactly. Technically, she did make a cappuccino. It's not really lazy. In fact, it's more trouble than needed. Spooning the foam on top is ridiculous.

  • False. Legally(Italian law), a cappuccino is espresso with gently frothed milk. Period. (oh yeah, and it should be ~5.5oz. total volume)

  • What she's making is a latte. A cappuccino is made with mostly foamed milk and is supposed to be very very light.

  • Not true. A caffe latte is anything exceeding ~5.5oz. of total volume. Order a "latte" in Italy, and you'll get a glass of milk.

    Even still, it's just a variation of a cappuccino. It can have as much or as little foam as you like. The definition has nothing whatsoever to do with the volume or proportions of foam.

  • It's in the way you hold the milk. Tilting will help make foam.
