There are actually those race levels in other versions, at least in PC version, they are just accesable from another level (like in Hall of Doors you have that newly unlocked level, and this Way is next to it, it's in this new level, right at the beginning, after finishing it's also available to be played from the Hall of Doors). They also give you something: Way of Life loads up your life bar, and Way of Power (i think it's called that) gives you Golden Gloves.
They put those creatures in the cages to give you extra health. And those creatures in cages seems normal after playing Rayman 1. And Fraps really doesn't like that sound apparently.
Yup these race levels are in the N64 version too.
