Jalapeno-Cheese Corn Muffins

I can't eat cheese, unfortunately, so I can't make these as is. I CAN have milk, though, as long as it's semi-skimmed. Think a little of that in the mix (or maybe a second egg instead?) and some olive oil could get a similar texture? I just love jalapenos, haha.
