There is no home menu. Only when you start up you can choose what car you want or bike.

youre probably missing rhe carbon cars, to get them you get them by doin all stunt jumps (the jansen x12 carbon), smash all smashes(i think you get the carbon gt concept), smash all billboards(i think you get the carbon hawker solo), setting all road rules(carbon ikusa gt) and beating all showtimes(the carbon hydros custom)

this is stupid -.- The cars in TUB are slower than the ones in the standard Burnout Paradise. For example my Carson Opus XS has got 6 boost points and 5 speed points...it has got 6 boost points and 9(!!!) speed points in the standard Burnout -.- The fastest car in TUB has 7 speed (Carbon Hawker). That is dipshit! I want the maximum speed! :(

You accept them by stopping at the redlights and push R2 L2 if your on a ps3 and the opposite on 360. After a couple of races you will win a new car and so on...
