  • @ Affectedvan: Very good recipe, but she should know u always use tongs to turn the meat ur cooking, every time she pokes it with the knife, she's loosing juices from the veal, I've tried this recipe before & I add some fresh lemon juice.

  • is there an alternative meat cut from a regular cow for this dish? I try to avoid veal.....

  • @orlendatube answer; shanks are seldom veal,they usually are from a full grown steer,even if they call it veal.

  • Again, just love the fact you are choosing cast iron. I use enamel le creuset but it's all good, at least not stainless. WAIT! NO WINE? Cmo'n man, needs wine and more veggies.

    I have been hooked on this dish ever since my wife and I had it at "il Mulino" on long island. Best bite was spreading the marrow on crispy bread. FOODGASM!

  • A minor nit to pick - when searing meat I suggest using tongs instead of piercing with a fork when turning or removing it from the pan. In a case like this where the meat and any juices that have escaped are returned to the pan for a long braise, it isn't really an issue, but for something like a pan seared steak it could be a factor.

    And deglazing the pot with a good splash of red wine when you add your mirepoix might be a nice touch.

    As usual, another great recipe.
