when i was an apprentice butcher i was shown how to, what we call boxing a hide from the carcass using my fist and fingers in between the hide and the carcass and puling the hide at the same time so as not to cut the hide more than necessary .but it is good to see how other people do the same job, and the young lad being shown your way of skinning 5***** (there are many ways to do the same job)good luck and good hunting sir
