It should be obvious to fill the hole. You have to weld to the steel and fill it, so round and round, side to side, whatever you want. You're just filling a hole with weld then grinding it off to make it flush.
I cannot comment on the Technical side of the welding, but please if you are going to make video's that you want people to learn from get the sound sorted out as it is rather important to be able to hear everything apart from the grinder.
He showed us nothing! Brass underneath doesn't weld, well okay, that's something. But how did he fill the hole? Round and round the rim? In the centre? What size wire for what size metal? What volts for such a job (where there's no penetration required except on the edges) ? And you're going to show this to a welding class? Might as well show it to a bakery class.

It took me a while but I think what he did was to fill the hole with the wire weld?? Using a backing plate of some type.
Would that be correct? Being a newbie I would not have thought of this. Nicely done!
