No difference. I have a white, blue, gray, and black gi :) Its a personal choice. Some schools preffer to have all white etc.

You can eat ear protectors - you see them in wrestling lots cause it is really tough on the ears - but not everyone minds bashed ears. Some think of them as a badge of honour. I don't wear ear protectors myself, but I haven't developed cauliflour ears (yet after about 3 years of Judo and BJJ anyway).

Aye, it can do. As does wrestling and rugby. It is the friction and clashing of ears against hard bit of the body that causes blood clots which in turn causes the cartilage to die.
