The reason for the shouting is the handler has to make sure not only that the DOG hears but the JUDGE at trial. I once saw a judge deduct points for the handler being 'too soft of voice'

Dogs have very good hearing man. If you train a dog to respond to commands said in a normal voice, they will respond (this is how most dogs are trained).

It's optional. You can use any words you want for your cues. They don't have to be German.
