Lol "Wo bu shuo wo shi ai" is "I won't say I AM love".
In this song though the line "I won't say I'm in love" is translated to various verses that may not translate that to English at all. It was translated to "I've already fallen in love with him" like twice.

please educate a stupid american: can native chinese speakers understand what they're singing? There's music notes, so there's no intonations! I speak a little chinese but have to guess what they're singing. Do you guys ever have to look at a lyrics sheet to figure out what they're saying?
In Chinese songs, the context is enough to understand what its saying, and the tone is not that important. But sometimes you do have to look at the lyrics to make sure.
yes, we can understand most of the lyrics just listening to the songs. The context is very important and you need to be very familiar with commonly used phrases and slangs too.
