  • true japanese chefs would stone this guy when he mentions the fridge. A tempura batter should be use immediately after mixing. Left for too long, the batter will homogenize and you will lose the lumps, which are essential to have a great *not average* finished product.

    Simply refrigerate all ingredients before mixing

  • You do not put it in a refrigerator after mixing it, and I think that to mix cold water, cold flour, a cold egg with is a general method.

  • I think using a french whisk would be easier to stir with. :O

  • when making tempura, you should not mix the batter too much because that would create the gluten in the flour which results in less crispyness, hence the chopstick

    Also, the little lumps of flour in the mixture is actually desired as this makes the end result crispy and light

  • @rabbiteh not vary good instrutions ...that is not how i was shown how to mmake temura batter..my brother in law is japonese..you need to go step by step works better cooking with gas than electric

  • Also I think if you used a whisk it would end up bringing too much air into the batter. If you don't got chopsticks I think a wooden spoon wouldn't be too bad

  • i agree, it would be much easier to use these videos if each individual recipe was left as one long segment in its own singular video. that way we wouldn't have to do so much searching for the video follow-ups
