  • i used wiltons royal icing because thats what my teacher told me to use and my flowers flattend.. your recipe is basicaly the same thing rightt?

  • Very helpful! I am a beginner decorator an I recently tried to make royal frosting. I used the Wilton recipe. I had to cut the recipe in half because I didn't have 4 cups of confectioners sugar. I whipped until peaks formed and attempted to make roses. My base was very unstable and my flower flattened quickly. I didn't want to add even more powdered sugar because the icing already tasted way to much like powered sugar. Should I have added more? Where did I mess up?

  • Remember, you control the icing. Don't let it control you. If your icing is too stiff, add 1/4 teaspoons of water one at the time: if it's too thin add more confectioner's sugar. When you put the icing in your bag, don't put a lot. Try making the first flower first, and if your icing is good, then you continue. You will get to the point where you will know if your icing is good by the sound the mixer makes when you are beating the ingredients. Trust me, experience talking here!

  • Muchas Gracias, Yolanda! Your dog is SO cute! He wants to be a patissier, apparently. I used exactly the recipe you recommended. I'm 4 batches in - each one washing everything, starting again from scratch. I've used almost all my meringue powder! At 5.5 T of water, it's too watery and the petals melt within 5 minutes. At 5 T, it's so stiff my hand throbs after making just one. Any advice, please?

  • @yhani29 I apologize for getting back now. I just checked my email this evening. For Royal Icing I use the following recipe:

    3 level tbs Wilton Meringue powder

    1 lb sifted pure cane confectioner's sugar

    4-6 tbs warm water.

    All utensils should be free of grease.

    Put the sugar and the meringue powder in a bowl at low speed until mix.

    Add the water, mix for about 7 minutes.

    If too stiff add water. If too watery add extra sugar.

    Keep cover when not using as it will dry very quickly.
