What I like to do is coat the chicken in corn starch, it gives it a nice crust and absorbs all the good flavor, then when you mix it all in it also thickens the sauce.

Dose boiling the bamboo for that long soften it, or do anything else besides take the coloring out as you said?

I haven't tried with regular milk but you can try. Otherwise, don't use the coconut milk at all.

No, because the coconut milk also has oil and other minerals that add texture and subtle flavor to the food.
Regular milk should only be used in Italian food or other Western meals because of the protein in the milk.
Milk doesn't go well with the other spices in Asian food like mango and fish sauce.
