this is the worst advice ive ever heard..i work in a famous restaurant, and we had a guy never give exact change, because he didnt feel like messing with the coins, so eventually he got a complaint and FIRED for STEALING. take pride in what u do, and i always give my name because they ASK FOR ME when they return!!!!...i know how to do my job with both eyes closed to 100% perfection and have no qualms about giving my name out ever

This is how to serve perfect guests in a perfect restaurant, in a perfect world! Serve from the right/left if it gets a spoon/fork? Are you insane? Maybe in a 5 star joint but you're wearing jeans and the background screams woodfire pizza or some nonsense! xD

P.S. My manager would have a stroke if any of us were on time let alone 15min early HA!

I would add don't have the phrase "Ya can't refuse" on your wine list but that's a personal preference I suppose. :D

I would also add to leave that last slash in the wine bottle so that you can come back when apps arrive or are cleared and put that last splash in the host/hostesses glass before you ask "Would you care for another bottle or something else, perhaps?".

With that pour you most likely have gotten their attention apply the sell in a subtle and effective manner.

I don't think this only applies to fine dining. I've worked in cafes and lower-class restaurants where the professionalism of the staff make the difference between a good and bad dining experience. Joking and sitting with customers is something I would never do when I'm on the clock.

That is very outdated. Except when serving wine for the tasting and rarely is everyone's food going to match the wine. Some people like to have a glass of wine before dinner so it is definitely okay to ask a guest if they want some wine. If they don't want any right now, they will tell you
