i make infused oils all the time, but what u found is the oil comes out better if u dont cook the spice. just warm it. the oil should be around 160 F, in my opinion.
Infused Oil is seriously underrated. Using infused oil & compound butters is one of the best & easiest ways to build "layers" of flavor. Ever since I've been using it, my cooking has stepped up to a higher level. Love your vids, keep 'em coming.
Cmon people, instead of putting it down because it is not extra virgin olive oil, be grateful that someone posted a video to show people how to do it at all - good for you if you can improve on the method, ingredients, whatever. Putting others down does not make one look or sound good - it just makes one seem like a complainer.

Another way of looking at it is that extra virigin olive oil is not suitable for medium to medium-high heat and considering that he was using this for a steak and he needed to get the oil pretty hot for the infusion, extra virgin olive oil would be a poor choice.
bwhahah. this oil is not a pure extravirgin olive oil. the color is to clear. belive me i'm italian and i put it on the bread with salt for the breakfst. they sell you a seed oil, or a motor oil ghgh
Yeah I agree, he said pure, pure doesnt always refer to extra virgin, and I know that isnt extra virgin anyway, thats just pure olive oil, because I use that in my cooking, I don't particularly like the flavour of extra virgin olive oil.

what is the point of make and use a very light olive oil?
if you don't like the olive taste just use some crap soya's oil than.
In italy i never see olive oil with tath color, perhaps in some hard discount...
