  • @mrozjill31 - No problem. Louisana makes Country Smokers that also are pellet burners. The pellet smokers are getting very popular in competition BBQ. Check out The Louisiana WH-1320. Load the hoppers up with wood pellets and the hold temp and smoke for 10 hours. No messing with them at all.

  • I see little of no smoke from your cooker. How do you get the smoke flavor?

    All one needs is a nice thin blue smoke. You don't need dense smoke and white smoke is a bad thing as it will leave a bitter flavor. You want the wood to burn just hot enough to produce thin blue smoke. Low smoldering wood will produce white smoke and allot of it procducing a bitter flavor on the exterior of the meat.
