I often use Hawaii grown Hamakua Mushrooms. The type are Kea Shimeji. For the taping of this recipe the photographer and I decided totally white mushrooms cause too much contrast and don't show up well in the pan, so I got some brown Japanese mushrooms to look better on the video,
You can use whatever mushrooms you can get and like.
They don't look like Enoki mushrooms to me. Enoki mushrooms are smaller and are bright white. I use them often. I wish I knew what type they were though.
This looks delicious. I might even try to make the cashew cheese and adding that. I imagine it is similar to adding pine nuts to this recipe. I guess those are enoki mushrooms?

They don't look like Enoki mushrooms to me. Enoki mushrooms are smaller and are bright white. I use them often. I wish I knew what type they were though.

If they are Enoki (which I still doubt) then they are very mature Enoki mushrooms.
