Is there a process for preparing the salmon to get rid of any "fishy smell or taste" ? I noticed that salmon sushi almost has no traces of a fish smell but most raw salmon bought does...
@RabidTechnical fishy smell = old or wasn't prepared for raw consumption. that is why there is sushi grade fish and then regular raw fish. sushi grade means. it was properly handled from being caught to gutting, deboning, and filleting. raw fish from the market doesn't need much special attention because it was probably meant to be cooked. poke the fish meat w/ your finger and it has a bounce and the meat is firm and tight then its fresh. bold bright vibrant colors also means fresh.

When you go to a market and you ask them if they have sushi grade fish, what you are really asking is, "Do you have fish that was properly handled from being caught, gutted, transported, then sliced into blocks. Majority of the time the fish is cut then frozen then pre-thawed for consumers before you get a chance to see it frozen in the refrigeration section. Of course once frozen the quality of the fish is distorted
I LOVE SALMON SUSHI more than the maki & I love Shrimp Tempura temaki. I go to the sushi buffet on the weekends for $22.95 just to eat this. I'm currently pregnant & eat like a teenage football player & I told my hubby to take me there to make a dent on their salmon supply. I think they do the buffet so that everything they get delivered doesn't go to waste. I'ma try this at home, THANKS!
@mikejessmax o no! thats good to hear that you like sushi but make sure its cooked. If you're pregnant the doctor should have recommended that you do not eat raw fish because of the mercury content. but yea any other cooked sushi should be fine.

@vraymond02 Woooooh hold up. Cooking does not change the mercury content, it is strongly bound to the proteins in fish, its the potential bacteria issue that the doctors are on about. Tuna has high mercury so steer clear of that while pregnant but salmon generally has lower levels which are safe levels for pregnant women

if u go to a japanese market they should have fresh fillets unfrozen ready to purchase. if you have them frozen already then yes let it thaw out at room temperature. Don't use water to help it thaw.. especially warm or hot water or the fish will be cooked right away. just let it sit there and thaw out then toss it in the fridge and use it within 48 hours, fridge when not using
@bananaman22 Yes, frozen fillets are fine. As most places freeze them anyway and then thaw them out for sale. If its smelly then you the fish was dead for a long time before it had proper care. Smelly fish is not fit for sashimi. Old and smelly fish that was still edible came to the invention of spicy salmon and spicy tuna which masks the old taste. but if a fish smells horrible or the color is hella distorted just toss it.
@banaman22 The average sushi restaurant get the fish on ice pre-gutted, cut it, freeze it because there's no way an average restaurant can serve up that much fish and save on transportation or a minimum purchase is involved for a certain price. When you go to the expensive restaurant, they have the flexibility to never freeze and throw away raw fish that has past its shelf life for safe consumption.

how do u eat that? i mean there's no soy sauce?? only wasabe? here in Philippines we use to eat that with soy sauce and wasabe, we combined BOTH! then we dip the salmon!!
if you are cutting a whole fish then yes you should wash it thoroughly. Washing a salmon fillet is a different story. If you don't think the fillet is clean then you can wash it gently with low cold running water. Excessive water will break the salmon fillet apart. Water will seep into the cracks between the fat and meat and break open. If that happens you cant use it for sashimi or nigiri. Only salmon sushi rolls. =T So be careful when you are washing fish.

Yes if prepared without pre freezing for certain length and time and making sure the inside of the fish meat is frozen as well.
If you don't freeze it, you may get a tapeworm.

@vraymond02 Woooooh hold up. Cooking does not change the mercury content, it is strongly bound to the proteins in fish, its the potential bacteria issue that the doctors are on about. Tuna has high mercury so steer clear of that while pregnant but salmon generally has lower levels which are safe levels for pregnant women
